Gummy OEM Formulation Design: Sweeteners, Acidulants and Active Load Working Together

Brand owners often assume a gummy is just a gelling agent, sugar and flavour stirred together, then wonder why sampling produces problem after problem: the piece will not release from the mould, it weeps after a few days, the sour note will not come through, or the gel collapses once actives go in. The underlying reason is that a gummy is a coupled system. Gel strength, pH, soluble solids, water activity and the cooking end point all pull on each other, so moving one variable forces a retune of the rest. This guide works through the design sequence for gummy OEM formulations.

Gummy OEM Formulation Design: Sweeteners, Acidulants and Active Load Working Together

1. Fix the gelling system first

The gelling system is the structural backbone and has to be settled before anything else. Gelatin gives good elasticity, the familiar chewy bite and low cost, but it is heat-sensitive, unsuitable for vegetarian positioning and needs a long drying time. Pectin gives high clarity, clean fruit flavour release and vegetarian suitability, but it is far more sensitive to pH and soluble solids, so the processing window is narrow. Carrageenan and blended systems serve specific textures, such as a shorter bite or better heat resistance. The choice should not rest on texture preference alone: in hot climates or where ambient distribution is the norm, the heat tolerance of a gelatin gummy is usually the deciding weakness.

Once the system is chosen, dose is calculated backwards from target finished moisture. Most gummies land between 14 and 20 percent moisture; lower moisture stores better but eats firmer. That range should be agreed with the brand at sampling and written into the process file rather than left to operator judgement.

2. The sweetener system is more than sweetness

Sugar in a gummy does more than sweeten. It is the main source of soluble solids and directly shapes the gel network and water activity. The classic pairing is sucrose with glucose syrup. More syrup suppresses graining, improves clarity and reduces cloying sweetness, but too much leaves the piece sticky and hard to dry. More sucrose risks graining and a coarse mouthfeel. Working ratios typically sit between 1:1 and 2:1 syrup to sugar, adjusted for the target texture and the drying capacity available.

Demand for sugar-free and reduced-sugar gummies has risen sharply, with maltitol, sorbitol and erythritol replacing some or all of the sucrose. Three effects need assessment up front. Polyols have different hygroscopicity, which shifts both the drying curve and final moisture. Erythritol absorbs heat as it dissolves and tends to recrystallise, producing a sandy mouthfeel. And because polyols are incompletely absorbed, higher loads can cause gastrointestinal discomfort, which calls for a label statement. None of this is a straight one-for-one swap; the process has to be re-run.

3. Acidulants and pH: the most sensitive variable

Acidulants cause more formulation failures than any other ingredient. They do more than add sourness - they pull the system into the pH window the gel needs. Pectin systems generally require pH between 3.0 and 3.6, and outside that window gel strength falls away or the batch never sets. So the type, dose and addition point of the acid all need tight control.

Standard practice is late acid addition: the acid solution goes in after cooking, once the mass has cooled to a defined temperature, which prevents acid hydrolysis of gelatin or pectin at high heat. Citric, malic and tartaric acids release their sourness at different rates, and blending them produces a rounder profile. Bear in mind that acid addition lowers pH and adds water, so the cooking end point must be raised accordingly or finished moisture will run high.

4. Active load and the effective dose

Gummies are popular as a delivery format for actives, but load is bounded by two hard constraints. Process-wise, too much active dilutes the gel network, extends drying and can introduce off-notes needing masking. Compliance-wise, the inclusion must respect the permitted use level and target population for that material; some extracts carry a daily intake ceiling, and children's products need the dose recalculated against body weight.

At sampling, state the per-serving figure - the actual amount per piece or per stick - rather than only a percentage on the formulation sheet. We normally ask brands to start from the intended daily intake, work back to the per-serving amount, and only then convert to a formulation ratio. That protects efficacy and avoids paying for inclusion the product does not need.

5. Parameters to lock during sampling

A successful sampling round should fix at least these: cooking end point as soluble solids or temperature; depositing temperature and mould temperature; acid addition temperature and method; drying room temperature, humidity and duration; target finished moisture and water activity; and the demoulding and oiling or sanding method. Leave any one of these undocumented and batch variation shows up at scale. Keep a retained reference sample after first-article approval so later batches can be compared for texture and sensory behaviour.
