Solid Beverage OEM Formulation: Solubility, Flavour Masking and Nutrient Blending
Powdered beverages look like the lowest-barrier format and are actually the one that tests formulation skill hardest. Clumping, bitter or astringent notes, and uneven fortification almost always trace back to a messy blend design at the formula stage. This guide explains, from the solid beverage OEM development side, how a producible formula is actually built.

1. Solubility is three factors, not one
Instant solubility is governed together by wettability, dissolution rate and suspension stability. Wettability is whether water spreads across the particle surface fast, usually helped by maltodextrin or lecithin-type agents that lower the contact angle. Dissolution rate depends on particle porosity and size distribution - spray-dried agglomerated porous granules dissolve far faster than mechanically mixed powder. Suspension stability needs hydrocolloids and emulsifiers. The weighting shifts by product: protein drinks favour suspension, coffee favours dissolution speed.
2. Off-notes from actives must be handled early
The fishy note of peptides, the green astringency of fruit-vegetable powders, the bitterness of some extracts - these are the hardest part. Masking routes: microencapsulation with cyclodextrin or microcapsules to delay release; flavour contrast using citrus, berry or dairy notes; and acid adjustment, where moderate citric acid lowers the bitterness threshold. A caveat: masking is not hiding. Over-flavouring breaks a clean-label position, so validate acceptance with blind tasting at sampling.

3. Fortification uniformity is a hard requirement
Micronutrients (vitamins, minerals) are added at tiny levels, and poor blending means dose swings within one box. Plants use geometric dilution for the premix, then total mix with the base, and verify blend uniformity by NIR or HPLC (RSD usually under 5 percent). Watch incompatibilities: high iron with high vitamin C oxidises and discolours; calcium complexes with some amino acids and hurts solubility. The formula review must check each pair.
4. Parameters to lock at sampling
A producible formula's sampling report should at least fix: base carrier (maltodextrin to resistant dextrin ratio), instantising agent type and level, taste-masking system, target pH, water-activity ceiling, and reconstitution ratio (e.g. 1:8). These decide both stability and cost. Much rework comes from sampling only for taste and leaving process parameters loose, so a new raw-material batch drifts flavour and solubility in production.
5. The priority order of blending
Formula design is not piling in everything good. The right order: set the carrier and instant skeleton first so it reconstitutes, then place actives and solve their flavour and compatibility, then fine-tune mouthfeel with masking and acid. This avoids the trap of "added nutrition but won't dissolve" or "added function but undrinkable". Write the four-step parameters into the process file at sampling, and production gets a repeatable baseline.
