Depositing and Drying Room Parameters in Gummy OEM: Moisture, Water Activity and Yield Control

Depositing and drying are the two stages that decide whether a gummy programme succeeds, and the two that brand owners inspect least. A formulation can be sound and the gelling system correctly chosen, yet still produce collapsed, sticky, weeping or moulding product if the depositing temperature runs high or the drying room humidity drifts. The awkward part is timing: gummy defects often surface two or three weeks after dispatch, by which point the goods are already sitting in a warehouse and the cost of putting things right has multiplied. This article sets out how depositing temperature, drying room conditions, moisture content and water activity fit together, and where yield actually disappears.

1. Depositing temperature: the window before the gel sets

After cooking, the syrup has to be cooled into a defined band before it goes to the depositor. Too hot and a gelatin system hydrolyses faster than it should, gel strength drops, and the finished piece turns soft or fails to set altogether. Too cool and viscosity climbs, shot weight becomes unstable, and you get tailing, trapped air and incomplete shapes.

Gelatin systems typically deposit somewhere in the 80-90C region; pectin systems sit slightly differently, and the exact figure depends on solids content and the grade of hydrocolloid being used. In practice, viscosity is a more honest control variable than temperature. A ten per cent shift in viscosity between batches at the same temperature will visibly change how the syrup deposits. Plants that run this well draw a viscosity check before depositing and treat temperature as an indicator rather than the thing they are actually controlling.

2. Shot weight stability and mould management

Gummies are priced by shot weight and deliver their actives by shot weight. Blocked depositor nozzles, drifting syrup temperature and residue left in the moulds all push individual pieces off target. Small per-piece deviations compound across a batch into either under-filled packs or cost overruns - neither of which anybody wants.

Starch and silicone moulds are managed on completely different logic. Starch is cheap, breathes well and handles complex shapes, but demands disciplined dust control and even drying. Silicone releases cleanly, gives a glossy surface and is reusable, but carries a higher initial cost and stricter cleaning requirements. The choice comes down to order volume, shape complexity and where the product sits in the market - not to which option looks more modern.

3. The drying room: temperature, humidity and airflow together

Once deposited, gummies move into the drying room to lose water and take their final set. Three variables govern that room: temperature, relative humidity, and air velocity with its distribution. Run too warm and the surface skins over before the interior has given up its moisture, which later shows up as weeping. Run too cool and the cycle stretches out, eating capacity and widening the window for microbial growth.

Relative humidity is the variable that matters most. If the room is humid, water simply has nowhere to go; finished moisture lands above specification and mould risk climbs sharply through the shelf life. Drying rooms are therefore held at low relative humidity through dehumidification and fresh-air ratio control rather than by heating alone. Air distribution matters just as much - where temperature varies by more than two or three degrees across the room, one batch will show a spread of moisture contents, and sampling will pass while the batch as a whole is unstable.

4. Moisture content and water activity are not the same measurement

Moisture content is the share of total weight that is water. Water activity, or aw, measures how much of that water is free and therefore available to microorganisms. Microbial stability in gummies is governed by aw, not by moisture content. Two products can carry identical moisture and sit a long way apart on aw purely because their humectant systems - polyols, glycerin, sorbitol - are blended differently.

Gelatin gummies are generally held between 0.60 and 0.75 aw, a band in which most moulds and bacteria cannot grow. Pectin gummies run more acidic, typically pH 3.2-3.8, which combined with lower aw leaves less preservation work to do. The target aw should be fixed during formulation and then delivered by the drying process - not measured afterwards and patched up when it comes back over limit.

5. Where the yield goes

Margin in gummies lives and dies on yield. The usual leakage points are cook and pipeline residue, drips at the depositor, deformation and blocking in the drying room, breakage at demoulding, losses during sanding or oiling, and rejects at metal detection and visual inspection. Each one looks like a percentage point or two. Stacked together they can remove well over ten.

The fix is unglamorous: measure the loss at each stage separately instead of watching only the final output figure. Pipeline residue is recovered through insulation and blow-down; deformation during drying points back at depositing temperature and mould condition; demoulding breakage ties directly to release agent dosage and how far drying has gone. Much of the spread between quotations for gummy OEM work comes down to yield discipline rather than ingredient cost.

6. Stability observation before dispatch

Before a gummy shipment leaves, it is worth running an accelerated stability hold - elevated temperature and humidity for a defined period - and watching for weeping, stickiness, hardening, colour shift and microbial growth. That one step catches under-drying and inadequate barrier packaging while the goods are still in your control rather than on a retail shelf.

For brand owners, the acceptance criteria worth insisting on are not centred on taste. Moisture content, water activity, per-piece weight deviation and microbial counts tell you far more about whether a batch will still be sellable in twelve months than a tasting panel ever will.
